Turkey and Red Grape Salad
- 4 cups cooked turkey, cut in 1 inch cubes
- 1 cup chopped celery
- 2 cups red grapes, halved
- 1 cup slivered almonds
- 1 cup Swiss cheese, cut in 1 inch cubes
- Dressing
- ¼ cup non fat sour cream
- ¼ cup lite mayonnaise
- 2 Tbsp rice vinegar
- 2 Tbsp sugar
- 1 tsp kosher salt
- ½ tsp pepper
- ¼ cup finely chopped parsley (optional)
- Whisk together dressing ingredients in a small bowl, pour over turkey mixture and toss to coat.
- Refrigerate.
- Best served chilled over a bed of red leaf lettuce.
Oriental Turkey Salad
- 1 small head of Napa Cabbage, shredded, approx. 4 cups
- 1 small head of green leaf lettuce, chopped, approx. 2 cups
- 3 green onions, chopped
- 3 stalks of celery, chopped
- ½ cup slivered almonds
- 3 cups cooked turkey, chopped
- 1 package of Oriental noodles (like Top Ramen), crushed
- Dressing
- ½ cup seasoned rice vinegar
- ½ cup vegetable oil
- 2 Tbsp sesame oil
- ¼ cup sugar
- 1 tsp kosher salt
- 1 tsp pepper
- Combine chopped vegetables and turkey.
- Whisk dressing in small bowl.
- Add almonds and crushed noodles into salad and toss with dressing just before serving.
Turkey, Apple, Brie Sandwiches
- ¼ cup Dijon mustard
- ¼ cup honey
- 12 slices Sourdough bread
- 2 large Granny Smith Apples
- 12 slices of roasted turkey
- 12 oz Brie Cheese
- Open 6 slices of sourdough bread, spread with the honey mustard spread (or save to serve on the side of the sandwiches)
- 2 slices of turkey
- 2 slices of green apple, peel on, core removed
- 2 ½ inch slices of Brie cheese, about 2 oz total on each
- Top with slice of bread and place on a griddle sprayed with non stick cooking spray.
- Grill 4 – 5min on med high and turn sandwich, grill to golden 2 – 4 more min.
- Set rest 5 min before cutting.
Turkey and Asparagus Quiche
- 1 unbaked refrigerated pie shell
- 2 cups chopped asparagus
- ¼ cup cooked bacon crumbles
- 2 cups chopped cooked turkey
- 1 cup shredded Swiss cheese, can use mozzarella or Parmesan
- 6 eggs
- ½ cup milk
- 1 tsp kosher salt
- ½ tsp pepper
- ¼ tsp nutmeg
- Zest of ½ lemon
- Preheat oven to 400 degrees
- Press pie shell dough into a deep dish pie pan, crimp edges if necessary.
- Steam the asparagus over boiling water or in microwave 1 min.
- Into pie shell, add turkey, bacon, steamed asparagus and cheese.
- Whisk egg, milk and seasonings together, pour over pie shell ingredients.
- Bake uncovered until firm, about 45 min.
- Let rest 10 min before cutting.

These recommended directions work for our Dream Dinners french cut, boneless 6-8 lb turkey, a store-bought 16 lb turkey or 6 -8 lb turkey breast.
The best way to thaw a frozen turkey is in the unopened wrapper on a tray in the refrigerator. It takes 4 hours per pound to thaw a turkey (24 hours for every 5 pounds). Dreamy Cream Pie Recipe
Go ahead and make three batches at a time of this dreamy dessert: one for tonight, one for a friend, and one to serve from the freezer to your unexpected company. Nothing beats the delicious combination of chocolate and peanut butter.
- 1 cup Chocolate syrup
- 1 Store-bought graham cracker crust
- 1 1/2 cups (12 ounces) Nonfat cream cheese
- 1 1/2 cups Sugar
- 1 1/2 cups Low-fat nondairy whipped topping
- 1 1/2 cups Peanut butter
- 1/4 cup (1 ounce) Chopped peanuts
- Spread 1/2 cup chocolate syrup into the bottom of your graham cracker crust.
- In a large bowl, blend the cream cheese & sugar together with a handheld electric mixer, on medium speed, until fluffy.
- Add the whipped topping & peanut butter and mix well.
- Pour the mixture into the crust, mounding it slightly in the middle.
- Drizzle the remaining 1/2 cup chocolate syrup over top and sprinkle with nuts.
- Freeze overnight.
- Serve frozen.
- To freeze
- Cover with foil, forming a dome to prevent smashing the pie, and place in a deep rigid container with a lid. Label, date and freeze for up to 3 months.
Baby Spinach Salad with Fresh Mango-Lime Dressing
- 12 Cups Baby spinach, pre-washed & dried
- ½ cup Cashews, roasted, unsalted pieces
- 2 ½ cups Mango, peeled, seeded, diced
- ¼ cup Sweet red bell pepper, minced
- ¼ cup Fresh orange juice
- 2 Tbsp. Fresh lime juice
- 3 Tbsp. Red onion, minced
- 2 Tbsp. Cilantro leaves, chopped
- 2 Tbsp. Brown sugar, packed
- ¼ tsp. Salt
- 1/8 tsp. Black pepper
- Place all dressing ingredients in bowl and combine well.
- Toss spinach with dressing, serve garnished with cashews.
Pesto and Red Pepper Torte
This recipe comes from our cookbook and makes a great appetizer!
- 2 Cups Butter
- 2 Cups Nonfat Cream Cheese
- ¼ Cup Store bought Basil Lemon Pesto
- ¼ Cup Store bought Red Pepper OR Sun-Dried Tomato Pesto Sauce
- 2 TBSP Chopped Fresh Parsley
- and/or
- ¼ Cup Toasted Pine Nuts
- Line one 4-Cup bowl with Cheesecloth, leaving 4 inches hanging over the edge of the bowl.
- In a large bowl, cream together the butter & cream cheese with an electric mixer.
- Spoon ½ Cup of the mixture into each bowl (from step1).
- Level & smooth the mixture with rubber spatula.
- Spread 2 TBSP of basil pesto evenly over each mixture.
- Spoon ½ cup of cream cheese mixture over the basil pesto and smooth with spatula.
- Spread 2 TBSP of red pesto over cream cheese mixture.
- Repeat with remaining cream cheese & pestos, alternating green & red pestos, ending with the cream cheese mixture.
- Depending on the size of the bowl, there will be 2 to 4 layers.
- Bring the edges of the cheesecloth over the top layer & wrap tightly wih foil.
- Refrigerate overnight.
- Peel away cheesecloth & invert contents onto serving platter.
- Garnish with parsley and/or pine nuts.
